How to prepare
- In a frying pan, fry the chopped green onions in olive oil (or your favorite oil).
- When it softens a little, add water, salt, and your favorite seasonings. Add peeled and chopped potatoes.
- Once the potatoes are soft, remove them from the pot and place them in a blender.
- Add the coconut milk and about 2 ladles of the cooking liquid. Mix until a homogeneous cream is obtained.
- Serve hot.
