Homemade Sigh: A great way to brighten up a dry, shiny day

Making meringue may seem difficult, but with a few basic precautions, including room-temperature egg whites, a very clean bowl, and a low oven temperature, you can achieve a light, crispy, and glossy finish. An ideal recipe for beginners, it can be made in large quantities and only requires a few ingredients that you usually already have in your pantry.

Meringues are perfect to serve with fruit, stuff desserts, decorate cakes, or simply snack throughout the day. Slow baking and gradual addition of sugar ensure a perfect melt-in-your-mouth finish.

Here’s how to prepare:

  • 1 cup refined sugar
  • pinch of salt
  • 1 teaspoon lemon juice (optional, but helps with stability)
  • Vanilla essence (optional)

How to prepare

  1. First, prepare everything. Preheat the oven to 100℃ and line a baking tray with baking paper or a silicone mat.
  2. Whip the egg whites. Place in a clean, dry mixer bowl. Beat on medium speed until soft peaks form.
  3. Add salt, lemon juice and sugar, spoonfuls at a time, until a firm, glossy, stable meringue is obtained (8-12 minutes).
  4. Flavor and Shape: Stir in a few drops of vanilla, if desired. Transfer the meringue to a piping bag and shape the meringue on a baking sheet.
  5. Bake: Bake for about 1 hour and 30 minutes without browning.
  6. Turn off the oven, open the door a little at a time, and leave the meringue for another 30 minutes until completely dry.
