How to prepare
- First, prepare everything. Preheat the oven to 100℃ and line a baking tray with baking paper or a silicone mat.
- Whip the egg whites. Place in a clean, dry mixer bowl. Beat on medium speed until soft peaks form.
- Add salt, lemon juice and sugar, spoonfuls at a time, until a firm, glossy, stable meringue is obtained (8-12 minutes).
- Flavor and Shape: Stir in a few drops of vanilla, if desired. Transfer the meringue to a piping bag and shape the meringue on a baking sheet.
- Bake: Bake for about 1 hour and 30 minutes without browning.
- Turn off the oven, open the door a little at a time, and leave the meringue for another 30 minutes until completely dry.
