How to prepare
- Crack the eggs into a bowl and mix with a fork until foamy.
- Add a pinch of salt and stir for a few more seconds.
- Add the tapioca starch little by little and mix to avoid lumps. If the mixture thickens, add 1 tablespoon of water.
- Heat a non-stick frying pan with a little butter or oil over low heat.
- Pour the batter, spread it with a spoon and cover with a lid. Cook until edges are set, about 2 minutes.
- Flip with a spatula and cook the other side for about 2 minutes.
- Turn off the heat, place the cheese slices on half of the disks, and fold in half.
- Return to low heat and cook for 1 minute to melt the cheese.
