This recipe is very versatile. Simply swap out the cheese for shredded chicken, ham, tuna, or any other ingredients you have in your fridge. Perfect for breakfast, an afternoon snack, or when you suddenly feel hungry.

  • 2 tablespoons tapioca starch (from frying pan)
  • 1 slice of mozzarella cheese or easy-to-melt cheese
  • A pinch of salt (optional)

How to prepare

  1. Crack the eggs into a bowl and mix with a fork until foamy.
  2. Add a pinch of salt and stir for a few more seconds.
  3. Add the tapioca starch little by little and mix to avoid lumps. If the mixture thickens, add 1 tablespoon of water.
  4. Heat a non-stick frying pan with a little butter or oil over low heat.
  5. Pour the batter, spread it with a spoon and cover with a lid. Cook until edges are set, about 2 minutes.
  6. Flip with a spatula and cook the other side for about 2 minutes.
  7. Turn off the heat, place the cheese slices on half of the disks, and fold in half.
  8. Return to low heat and cook for 1 minute to melt the cheese.
